Cauliflower Salad
Ingredients:
1 medium head of cauliflower; 1 1/2 cups of
roasted shelled peanuts, preferably unsalted; 1 pound of bacon;
1 package frozen peas, thawed; ½ to 1 cup of ranch dressing;
salt and pepper to taste.
Directions:
Preheat oven to 350 degrees and bake the bacon on a cookie
sheet. Flip as needed. Once cooked crisp, remove from heat
and place on platter lined with paper towels to remove excess
grease. Set aside to cool completely. Crumble into bite-size
pieces.
Rinse cauliflower and chop into small bite-size pieces. Place in a
large bowl.
Combine the remaining ingredients including the bacon. Add
enough dressing to thoroughly coat the mixture, adding more
as desired. Mix until all ingredients are sufficiently incorporated.
Season with salt and pepper to taste.
Confetti Corn Salad
Ingredients:
2 cans of red beans, rinsed and drained; 2 cans
of sweet corn, rinsed; 1 small red onion, chopped; 3 carrots,
peeled and sliced; 2 celery stalks, chopped; 2 small bell
peppers, chopped; 1 cup quinoa, cooked and cooled; 1/2 cup
apple cider vinegar; 1/4 cup sugar; 1/4 teaspoon garlic powder;
1/4 teaspoon red pepper flakes; and salt and pepper to taste.
Directions:
In a large bowl, combine all the vegetables and quinoa. Set
aside.
In a small microwave-safe bowl, combine the apple cider
vinegar and sugar. Heat for 45 seconds. Stir until sugar is
completely dissolved, reheating as necessary. Add the garlic
powder and red pepper flakes. Allow to cool.
Stir together the dressing and the vegetable mixture. Add salt
and pepper as desired. Serve immediately or chill and let the
flavors meld.
In a perfect world, your horse or dog could go with you on a mini-
vacation at the drop of a hat. But realistically, certain planning and
procedures need to take place when you travel with your animals.
There’s so much to think about! First there’s transportation.
How am I to get everything there?
Then you need to consider your
animals’ normal routine and start to pack. Next come the what-ifs
and unexpected scenarios — changing weather perhaps calling
for extra blankets; going somewhere for dinner, dancing or drinks
and worrying if the new puppy will have enough to stay occupied
without chewing apart cords, clothing and furniture. Most of us
have packed entirely too much and never had what we needed.
And unfortunately there’s not an app for that — at least not for the
actual packing part.
All the packing and planning aside, one thing we should never
be without is good food. It’s what helps your mind stay focused and
fueled to make it through your vacation, be it a day, a weekend
or longer. This month I’m sharing recipes for Confetti Corn Salad
and Cauliflower Salad. They’re easy to make, store beautifully in
mason jars and are packed with tons of nutrients and protein. You
could be heading out to a horse show, a road trip or even just
taking a trail ride at a local park. While I can give you one less
thing to worry about by helping cover ideas for the food you’ll take
along, the rest is up to you. Happy trails!
